If you’re looking for a new way to try lasagne, then this Bolognese Rotolo recipe is exactly what you need. It’s an absolute doddle to cook, and also makes for a really impressive dinner. Get everyone to serve themselves from a large oven dish, or why not make smaller, individual servings in smaller pots for mega impressiveness!

Bolognese Rotolo kind of like a beefed up (pun very intentional!) Cannelloni, and it is packed full of flavour. It’s not exactly a traditional Rotolo, but it is a great substitute if you’re following a plan like Weight Watchers, or calorie counting! It’s delicious served with a simple salad and cheesy garlic bread.

This Bolognese Rotolo recipe can be made vegetarian as long as you use swap out the following ingredients for vegetarian versions;

How many calories are in this Bolognese Rotolo?

This Bolognese Rotolo is perfect if you’re following a calorie controlled diet, and fits well with any one of the major diet plans such as Weight Watchers.

Step 1

Heat a large non-stick frying pan over medium-high heat. Spray with low calorie cooking spray and cook the mince, stirring, for 4-5 minutes or until browned. Add celery, carrot, courgette, onion, tomato puree and garlic. Cook, stirring, for 5 minutes or until vegetables soften slightly.

Step 2

Next add the chopped tomatoes ,1/2 tin of water, stock cubes, and Italian herbs. Cook, stirring occasionally, for 20 minutes- the sauce should thicken. Cool. Preheat oven to 180°C.

Step 3

Meanwhile prepare your lasagne sheets. If they’re dry you need to cook them for a couple of minutes until they are flexible but not cooked through, and then cool them down. If you’ve got fresh or have made your own – continue.

Step 4

Cut the sheets in half length ways. Spread the halved lasagne sheets with the mince mixture – you want a fairly decent coating, but not too much that you can’t roll them up! Starting from 1 short side, roll up to form a log.

Step 5

Place some of the mince mixture in the bottom of an oven proof dish – a couple of cm’s deep. Place the rolled up sheets end up in the dish. Repeat with the remaining lasagne sheets until they’re all in there.

Step 6

Pour the rest of the mince mixture over the Rotolo. Sprinkle with cheese and bake for 35-40 minutes until the pasta is cooked. Enjoy!

How do you know when Bolognese Rotolo is cooked?

Cook the mince for 4-5 minutes or until browned.

Bake the Rotolo in the oven for 35-40 minutes until the pasta is cooked. The cheese will be bubbly and browning at the edges.

How long can you keep Bolognese Rotolo in the fridge?

Once you’ve put it out, ideally you should eat it within 4 hours.

If you allow any leftovers to cool, make sure to refrigerate in a container with a lid and chill. You can keep leftovers of Bolognese Rotolo in the fridge for approximately 3 days or so.

Can I freeze Bolognese Rotolo?

Yes you can! This recipe can be frozen, but please remember to do the following;

  • Freeze it as soon as it is cold enough.
  • Use a container or bag that is suitable for freezing.

Don’t forget to add a label with what it is, and on what date you put it in the freezer!

How do I reheat Bolognese Rotolo?

From chilled: Place in a microwave proof container with loosely fitting lid and heat for 4-7 minutes until piping hot.

From frozen: Allow to defrost, and heat covered in the microwave for 3-5 minutes then stir. Cook for a further 5-7 minutes until piping hot.

Ingredients

  • 450 g 5% lean beef mince You can use Turkey mince if you prefer
  • 5 button mushrooms
  • 7 lasagne sheets
  • 120 g reduced fat cheddar grated
  • 2 Sticks celery finely chopped
  • 2 tbsp tomato puree or tomato puree
  • 1 large onion finely chopped
  • 2 large carrot finely chopped
  • 2 cloves garlic crushed
  • 2 beef stock cubes
  • 400 g chopped tomatoes
  • 2 large courgette finely chopped
  • 200 ml water
  • 1 tbsp mixed Italian herbs
  • low calorie cooking spray

My partner doesn’t like celery. Is there anything else I can use as a substitute, or is it best to just leave out?
(I’ve made other meals just for me, with & without celery & I think it tastes better with!)

    Hey Michele, you could omit the celery or add some diced pepper or extra courgette, hope that helps!
